Chocolate Tempering — Seeding Method

  • This method works by heating a portion of your chocolate, then slowly "seeding" the unmelted chocolate into it while agitating constantly
  • The unmelted seed chocolate cools the melted chocolate and already has the correct crystal structure, encouraging the same structure to form as it cools
  • Top Tip: a metal bowl cools quicker than glass and speeds up the process
  • Guy on Reddit: "I add the distillate to the chocolate when I melt it (before tempering) and stir it in. I do not add additional oil or lecithin."
  • Melt 2/3 of your chocolate over a double boiler, stirring often until it reaches ~50°C/122°F (45°C/113°F for white and milk chocolate), then remove from the double boiler. Can also microwave in 15-second intervals until almost melted, around 115°F
  • With a clean, dry spatula, gradually add the remaining unmelted chocolate (chunks or grated/shaved). Stir until the temperature drops to 28°C/82.4°F (26-27°C/79-80.6°F for white or milk chocolate)
  • Takes 10-15 minutes, be patient. You can set the bowl in a second bowl of cold water, but be VERY careful — even a drop of water in the chocolate can cause it to seize
  • Briefly bring it back up to 30-32°C/87-89°F (28-30°C/82.4-86°F for white or milk chocolate) over the double boiler for 5-10 seconds if you need a smoother consistency. Then it's ready to use

  • Rhodes will also be transparent when he has the dream where he astral projects into Gideon's head

Hourly Comic Day Notes

  • 7am: woken up by alarm, didn't sleep until 3:30am
  • 7:59: late for work bc traffic
  • 8am: get to dish room, old gravy already in the empty sink. Fill sinks and get stuff into sink
  • 9am: toiling over big pile of dishes. Someone brings a big cart of salad bar stuff
  • 10am: bring dishes out to floor
  • 11am: fill sink with new water. Worst of it under control
  • 11:12: break. Look at other people's hourly comics
  • 11:45: come back to giant pile of dishes
  • 12:10: put long pans away. Struggle. Kneel down and put them up while people bump into me
